Refreshing Beet Pineapple Drink

Last week, I found myself with  fresh fruits from my local weekly market. I always try to make sure I include fruits in my weekly menu. I bought some beetroots at the market and I decided to make my classic pineapple and beets smoothie. It’s really, especially when the fruits are chilled, and the pineapple is really sweet. Well, that’s a story for another day. Today is for this Refreshing Beet Pineapple Drink.

As I was peeling the pineapples that day, I couldn’t help but wonder what I could do with the pineapple bark. I knew I could use it to make a traditional zobo drink or a simple pineapple infusion, but I wanted something different. Without zobo leaves at hand and not wanting a plain pineapple drink, I had an idea: why not try cooking the pineapple bark with the beet barks? And that’s how I came up with the idea for the Beet Pineapple Drink.

I used both the pineapple bark and the beet bark in this recipe, and since the beets share a similar reddish hue colour that zobo has. I thought, why not cook them together? To elevate the flavour, I added some ginger, and if I had cloves on hand, I would have added those too. The combination was both intriguing and delicious.

Beets are known for their various health benefits, such as  aiding digestive health, good for the brain, etc. The ginger provided that signature kick and flavour it’s famous for. After simmering the ingredients in water for about 10 minutes, I allowed the mixture to cool and then strained the vibrant, aromatic drink from the pot. To satisfy my sweet tooth, I added a touch of sugar, although you can easily replace it with dates if you prefer a natural sweetener. The result was a refreshingly guilt-free beverage.

Here’s the Recipe:

Ingredients:

  • Beets bark
  • Pineapple bark
  • Fresh ginger
  • Sugar (or sweetener of your choice)

Instructions:

  1. Thoroughly wash the bark of both fruits.
  2. Place the pineapple and beet bark in a pot, and add slices of fresh ginger.
  3. Pour in some water to cover the ingredients.
  4. Bring the mixture to a boil and simmer for approximately 10 minutes.
  5. Allow the concoction to cool, then strain the liquid into a container.
  6. Sweeten your drink to taste with sugar or your preferred sweetener.
  7. For an extra refreshing experience, chill the beverage before serving.

This Beet Pineapple Drink is a unique and healthy way to enjoy the goodness of beets and the tropical sweetness of pineapple. It’s best served ice-cold for the ultimate refreshing experience.
