Fruit Salad Recipe

Happy New Year, everyone! I am thrilled to be alive and ready to embrace all that 2024 has in store! This year, I’m bringing you refreshing recipes to begin your year with. It’s the perfect time to take control of what you eat and opt for healthier choices, including this rich fruit salad recipe!

Last year, I created a fruit salad recipe for my office’s end-of-year party. I wanted to deviate from the usual – watermelon, pineapples, and bananas. I sought to create a fruit salad with a unique flavor profile. So, I started out with watermelon and pineapple, and I expanded to include apples, cucumbers, and strawberries.

Contemplating whether this assortment would bring enough goodness, I took a chance by adding radishes, which is interestingly, a vegetable, not a fruit. Having enjoyed its peppery kick before, I thought to add it here.  To elevate the salad’s taste, I also picked up some mint, known for its refreshing and distinctive flavor. After dicing all the fruits, I cut the mint leaves and tossed them together with the fruit medley.

I was tempted to add coconut flakes, but I was a little careful during testing, considering the firm texture of coconut flakes. I was glad I made the decision, as because my salad came out great, each component shined out independently while marrying one another and releasing a delightful salad!

My intention was to pair the salad with yogurt, probably vanilla and strawberry yogurt. However, someone else brought ice cream, and oh, did it pair beautifully with the fruits! Some people opted for the pure, unadulterated freshness of the fruits, while others combined the fruits with ice cream, indulging in the sweet pleasure of both. You can do whatever works for you.

My initial idea was to create a salad dressing, but the natural juices from the watermelon proved to be sufficient, and so I abandoned the idea. I will be testing another new fruit salad recipe with a dressing, and I’ll definitely keep you posted. In the meantime, here’s to a fantastic new year filled with love, blessings, and more recipes from me!
