As you know, I try my best to be dynamic. New month, new post. As you know, your girl is always on top of her game. So I want to tell you about cakes and my journey towards attaining stardom in this wonderful art.
Let’s dive right into the matter…. Errm, well my journey into world of pastry started when I decided to enrol in a baking school. Hmmm.. Yes, I went to a baking school so that I know what exactly I am doing when I finally decide to make my own pastry.. and I am still thinking of a name…lol
Well, that’s what I thought but maybe someday I will tell you more about my pastry dreams!
Now, I learnt the hard way that pastry art is hard work. Before I was taught, I was confident that I could make a good one. I got the ingredients, mixed and cake turns out awful. Later, I got the opportunity to learn and then realized the importance of measurements while baking, the kind of ingredients used and so on. I have chosen to share this nice recipe that I have tried out and it came out well.
Anyways, whether you tried your luck on the baking trade or you just want to have a nicely baked cake, you might have had your expectations let down. Not to worry, I have decided to give you a step by step learning process to make your own awesome Christmas Cakes to share with friends and family.

Ingredients
Butter – 250g
Caster sugar -300g
7eggs
Flour – 350g
Baking powder-2 teaspoons
Mixed Fruit
Cocoa powder -70g
Powdered Milk Flavour
Baking soda-½ teaspoon
Chocolate flavour ½ teaspoon
Vanilla flavor-½ teaspoon
Nutmeg-1 teaspoon
METHOD
Goal 1: Beat the butter and sugar together using a hand mixer until light and fluffy.
Goal 2: In another bowl break the eggs and whisk.
Tip: Use the hand mixer to whisk until foamy.
Goal 3: Add the dry ingredients together flour, baking powder, baking soda and sift into a third bowl.
Goal 4: Pour in the eggs into the butter and sugar mixture and mix together.
Goal 5: Add the dry ingredients (flour, baking powder, baking soda) and mix well.
Goal 6: To get the flavours, divide this mixture into two bowls. For the cream cake, add nutmeg, mixed fruit, and milk flavour into the 1st half mixture and stir lightly.
Goal 7: For the chocolate cake, add very little warm water in the cocoa powder and mix.(This is to ensure there are no pebbles). Then pour the cocoa powder into the 2nd half. Add the chocolate flavour also.
Goal 8: Grease the pan with oil or little butter. After this, add flour in the greased pan and ensure it touches every corner of the pan and pour the flour out afterwards.
Goal 9: For the layering, put the chocolate half first and then the cream half next.
Bake in the oven at 280 degrees for 45mins – 1hr
