Eat and Chill: Two Comfort Foods for Slow Days

Should I have called this “Netflix and chill”? I only just figured out what that slang really means, and it’s funny how some phrases have entirely different connotations. Thank God I found the meaning first. Anyway, the point of this post is to share some food ideas perfect for those lazy, relaxing days. We all have those moments when cooking feels like a chore, and on movie or rainy days, or just those slow days, there’s no better way to enjoy time with loved ones than with comfort food.

My first pick for a mellow day would be pepper soup. With just two main ingredients—your choice of protein and pepper soup spice—it’s surprisingly simple to prepare. Combine the protein, spices, water, and a good amount of pepper, then simmer on low heat until everything is cooked through. Of course, adding some shredded scent leaves at the end elevates the flavour and takes it to a whole new level. It’s hands down one of the quickest to make on a lazy day. You can pair it with bread, yam, plantain, or even leftover rice. The possibilities are diverse!

Chicken wrap is another great option for a chill day. The combination of tender chicken, fresh vegetables, and a soft wrap is perfect for those mellow moments. Cut the chicken into cubes, season it with pepper, salt, and seasoning cubes, then lightly fry it in a pan until cooked through, usually in under 10 minutes. Warm the tortilla wrap on a flat pan or over direct heat, then fill it with the cooked chicken, fresh onions, lettuce, tomatoes, and a creamy component. I prefer Greek yogurt mixed with olive oil for a healthier twist, but mayonnaise works well too. To elevate the taste, add a bit of yaji pepper and thank me later!

These dishes pair wonderfully with cold drinks. While fizzy drinks are an option, natural drinks like zobo, iced tea, or pineapple juice offer a refreshing, healthier alternative that’s just as easy to make on a lazy day.

Have you had any such day recently? What do you like to eat on those days? Would you give these recipes a try?

Let me know!

Love,

Ayobambo
