Coconut fried rice

I am glad to be sharing this with you! How have you been? I really want to know! 😉

Recently, I realized there’s a lot that can be made with coconut. We can make coconut milk, coconut oil, coconut flour, shredded coconut and so much more. I will be sharing my recipes of how to make all these so please stay tuned and tell a friend to tell a friend. If you love the flavour coconut adds to food, juice or anything, you will definitely love this recipe. Quite easy and definitely not an expensive meal to make.

Before then, I have a puzzling question I’d love to ask: Is Coconut a fruit or a nut?

Ingredients

  • 3 cups of rice
  • Coconut milk
  • Vegetable Oil
  • Kidney/liver
  • 1 Green pepper
  • 1 bulb of Spring onions
  • 2 pieces of Red pepper (scotch bonnet)
  • 2 medium sized pieces of carrot
  • Onions
  • Green beans
  • Maggi {knor chicken}
  • Curry and Thyme
  • Salt                                                                                                                                                         Spring onions Carrots Pepper Coconut This is green beans. It is found easily in the market where fried rice ingredients and vegetables are sold.

 

Process

  • Slice your carrots, peppers, onions, liver, green beans.
  • Wash and parboil your rice
  • Put the pot the back on the heat, pour the coconut milk into the pot. Add the meat stock, spices (Maggi, curry and salt) to taste also and leave to boil.
  • Be careful not to add too much water so the rice is not too soft. (You can always add water gradually when you’re sure the rice is not soft)
  • Once it starts boiling, pour the rice and leave to cook properly.
  • On another heat, pour oil and onions and all the sliced vegetables. Leave to fry on low heat. Add salt (bearing in mind you have added some to the rice already). Once it is done, put it down.
  • When the rice is soft and the water gradually drying while on fire, pour the fried carrots and other vegetables. Leave until the water is dry and stir.
  • Serve with a cold drink and enjoy!
